There is a moment, during the summer months in Taormina, when our Chef stops looking at the sea and turns toward the volcano. It is the moment of the Carricante harvest: the white grape variety that grows on his land in Sant’Alfio, high on the southern slopes of Mount Etna, where the nights are cool and the air carries the scent of lava stone. Bianco Tauro Etna Bianco DOC was not born by chance. It comes from the Chef’s long family tradition. His grandfather loved cultivating vines in the countryside of Linguaglossa, and the memories of time spent among the rows remain deeply engraved in his mind.
Carricante was his favorite grape variety, and although his brothers preferred producing red wine, he always reserved a small piece of land to grow and produce white wine. The days spent in the vineyard, the long walks across the volcano through forests and lava fields, inspired the Chef to deepen his passion for winemaking on the land in Sant’Alfio where this production is born.
Bianco Tauro Etna Bianco DOC is family memory, an evocation of flavors and hard work; it is a journey.
The 2025 harvest delivered grapes of remarkable finesse: harvested at dawn to preserve their aromas, vinified with artisanal care, and bottled in only 1,333 numbered bottles. In the glass, you will discover a luminous white wine with notes of citrus fruits, white flowers, and a mineral salinity that recalls the sea of Taormina.
